Junk Food Makeover: Cookie Brownie

Can a brownie make you feel beautiful…we’re not making any promises but this recipe certainly won’t leave you feeling guilty. Made from wholesome ingredients this brownie is so delicious. The eggs, almond meal and coconut oil up the protein and fat content helping you stay fuller longer. The coconut sugar keeps the GI low keeping you more balanced.

Brownies
Yields: 1 half sheet pan

1 pound chocolate 70% or darker
1 2/3 cup coconut oil ( you can also use grass fed butter) room temperature
6 large eggs
3 1/3 cups coconut sugar
1 1/3 cups almond meal
2 1/3 cups brown rice flour
1 teaspoon sea salt
3?4 teaspoon baking soda
2 teaspoons vanilla extract

Directions:
1.    Melt the chocolate and the oil or butter together in a bowl over a
double broiler.
2.    While the chocolate is melting, in a large bowl combine eggs and
coconut sugar.
3.    Whip together the eggs, vanilla, and coconut sugar until smooth.
4.    In a separate bowl combine the flour, salt, and baking soda.
5.    When chocolate mixture is melted add it slowly to the egg mixture
and mix until combined.
6.    Lastly add in the flour mixture and mix until smooth.
7.    Line a sheet pan with nonstick spray and parchment.
8.    Spoon batter onto baking sheet and smooth out with a spatula.
9.    Bake at 350 degrees for 25-30 minutes.
10.  Let cool. Cut and store in fridge.
