Junk Food Makeover: Oreo Cookie

These “Oreos” are made with raw cacao powder and grass fed butter, which makes these the only Oreos you can eat for breakfast.

Ingredients:

For the cookie:

  • 4 tablespoons butter, room temperature

  • 2 tablespoons coconut sugar

  • 1 egg

  • 1 teaspoon vanilla extract

  • 1 cup almond meal

  • 1/3 cup arrow root

  • 1/3 cup cacao powder

  • pinch of sea salt

For the filling:

  • 3 tablespoons butter, room temperature

  • 1 tablespoon maple syrup

Yields: 8 cookies

Method:

  1. Whip together butter and sugar in a mixer until light and fluffy. Add the egg and vanilla. Add almond meal, arrow root, cacao powder, and sea salt until thoroughly combined.

  2. Roll into a log that is one inch in diameter and refrigerate for 20 minutes.

  3. Preheat oven to 350 degrees.

  4. Slice cooking dough into circles about 1/8 inch thick.

  5. Bake on parchment-lined baking sheet for 10-12 minutes.

  6. Let cool.

  7. Whip together butter and maple syrup until light and fluffy.  

  8. To assemble, place a teaspoon of buttercream between two cookies. Store in refrigerator.
