Junk Food Makeover: Whoopie Pie

This recipe is grain free. It is a healthy mix of protein and fats to keep you fuller longer. We like to use cacao powder to support soft and supple skin.

Chocolate Whoopie Pies with Banana Almond Butter Filing

1/3 cup unsalted grass fed butter, room temperature

1/3 cup coconut sugar

1?2 teaspoon vanilla extract

4 eggs

1/3 cup cacao powder

1/3 cup coconut flour

1 tablespoon arrowroot

3?4 teaspoon baking soda

pinch sea salt

Preheat oven to 325 degrees. Whip together butter, coconut sugar and a vanilla in a mixer until light and fluffy. Add eggs one at a time.

In a separate bowl combine, cacao powder, coconut flour, arrowroot, baking soda and sea salt.

Add to mixer. On a slow speed mix until well combined.

Scoop out tablespoon size rounds onto a parchment lined baking sheet.

Bake for 8-10 minutes.

Let cool for 45 minutes.

Fill two cookies with banana almond butter frosting.
Serve immediately or store in the refrigerator.

Banana Almond Frosting

2 ripe banana

1?2 cup grass fed butter, room temperature

1?2 cup almond butter, room temperature

1 tablespoon maple syrup or coconut sugar

pinch seal salt

Place bananas, butter, almond butter, maple syrup and sea salt. Beat until smooth and creamy.
