Tropical Passion Fruit Smoothie
I’ve spent the past couple of weeks in California and have fallen in love with passion fruit again. They literally grow on trees (or vines) here and you will find them in abundance at the farmer’s market. I’ve been eating the seeds right from the fruit, sprinkling them on chia puddings, and blending them into smoothies. This tropical smoothie is tropical, sweet, satisfying and balanced with the coconut butter. If you don’t have coconut butter, you can sub with coco oil. This is my morning go-to as I soak up my last few days in the Cali sun!
Ingredients
Serves 1
1 cup of unsweetened coconut milk
1 scoop of coconut yogurt (like Anita’s)
¾ cup of mango
1 small carrot
1 passionfruit (juice and seeds)
1 spoonful of coconut butter
Few cubes of ice
Method
Blend all ingredients together until smooth. Enjoy!
