The owner of BelAir Cantina, with five locations across Wisconsin, is expanding her footprint in the area with a new French restaurant at The Corners of Brookfield.

Kristyn Eitel plans to open Margaux, inspired by Eitel's passion for Parisian bistros, in late 2023 or early 2024.

Eitel bought the majority stock of BelAir and Fuel Cafe brands from previous co-owners Leslie Montemurro and Scott Johnson in fall of 2022. This is her first original concept since the acquisition of the other brands.

According to a news release, the new concept will tie together highlights from Eitel's 30-plus year service industry career.

“I want people to fall in love with dining out all over again; I want to bring the best of French cuisine into this modern and sophisticated, cosmopolitan yet relaxed setting and let the food and drink inspire great experiences," Eitel said in the news release.

BelAir Cantina already has a restaurant at The Corners. Margaux will occupy a space east of the main entrance to Von Maur, near the Market Square that hosts events and outdoor movies in the summer.

“Bringing a French Brasserie concept to the Corners is something that Kristyn has been working on with us for a long time. Given the European style of our Market Square, it simply had to be located there," The Corners CEO Robert Gould said in the news release.
