After his Japan supper club ends Saturday, Josh Dalton will develop a new menu for Veritas

Veritas restaurant’s eight-week trip to Japan through a supper-club menu of small bites and sake pairings is coming to a close.

Next stop: Thailand.

Chef Josh Dalton, who marries his love for travel with his love of food, will head to Southeast Asia for two weeks in January to experience the culture and cuisine of Thailand before developing his own take on its flavors for the next Veritas supper club.

He said it will debut as early as spring. Veritas, located at 11 W. Gay St., Downtown, will serve a classic American steakhouse menu starting Wednesday and continuing through the holiday season.

In the supper clubs he brings to Veritas, Dalton said he seeks to introduce others to the places he travels with the hope they’ll explore further on their own. His international menus so far have visited Japan, Mexico, Spain and France.

The Japan Supper Club, introduced in early October, received positive reviews for its food, cocktails, wines and attention to details such as oshibori, or a warm hand towel, between courses. Its last night is Saturday.

Following his January trip, when he'll also visit Singapore and Australia, Dalton said he'll begin to develop the Thai supper-club food and cocktail menus with Veritas colleagues. The months-long process includes sourcing ingredients and tweaking the restaurant's decor.
