Latin restaurant opens at Colonial Gardens in south Louisville. Here's what to expect
A new restaurant serving Latin cuisine has opened at Colonial Gardens, the restored historic property in south Louisville.
The food complex near Iroquois Park includes spaces for four restaurants, two of which are currently not operating. Costa del Sol takes over the spot off New Cut Road formerly occupied by Taco Luchador.
Originally from Honduras, owner Francisco "Omar" Santamaria said he wanted to share his favorite Honduran foods with Louisville. His family operates two Costa del Sol locations in Charlotte, North Carolina.
"I wanted to create a unique dining experience and bring people together through the joy of delicious food," Santamaria said in a press release.
The several-page menu features savory dishes such as baleadas, which are similar to soft tacos with a variety of fillings, and tapado, a seafood soup made with coconut milk.
Costa del Sol joins B.A. Colonial, a restaurant serving American fare, draft beer and cocktails, at Colonial Gardens.
Hokkaido Ramen & Sushi is expected to open soon, which will leave one vacant space left by the recent closure of the pizzeria Union 15.
