"Observed packaged, precooked eggs in three compartment sink at 73 F (was told they had been thawing one hour). Use proper thawing procedures to thaw such that food does not exceed 41 F for extended period (thaw in refrigerator at 41 F or under cold, running water not exceeding 70 F or as part of continuous cooking process).
"Repair cabinets to be smooth, cleanable. Refrigerators should be commercial grade."
