Apple, Fennel, and Kale Green Juice

We love a nice, clean juice to give us that kick during our midafternoon slump. It’s way healthier than reaching for that bag of M&M’s (we’ve all been there), and much more convenient than carrying around a crinkly bag of chips.

This vibrant juice is packed with healthy vegetables and fruits that will also power you through the morning. Maybe this is a good time to give up (or at least wean off) those two javas you down before 11 a.m. Who needs coffee when you have this sweet beverage to sip on?

Raw foodists swear by their morning “green juice,” typically a hodgepodge of seasonal green veggies and fruits. The combination of both allows for the sweetness to be rounded out by an earthier taste. Plus, veggies help keep the calorie count in check.

Start off the blending with honeydew melon, celery, apple, and fennel. Add the kale shortly after, and finally the ginger. Stir before serving so that all the flavors mix together. Try to drink this juice on an empty stomach so that your body can absorb more of the nutrients and vitamins.

1/4 honeydew melon, rind and seeds removed
1 stalk celery
1 Granny Smith apple, cored and quartered
1 head fennel, quartered
1 bunch kale
1-inch piece fresh ginger, peeled

Press all ingredients through a juice extractor in batches. Stir and serve immediately.
