Cake of the Day: Blackberry and Vanilla Ruffle Cake

Ruffle some feathers—in a good way!—with this feminine cake from Krystle Drewry and Felicity Dodsworth. The two northern England women own Juniper Cakery, a bespoke cake making business as well as an online cake decorating supply store. Luckily for those of us who don’t live near the Kingston-upon-Hull area, the Juniper blog is filled with recipes to try at home.

For this one, Dodsworth and Drewry bake three vanilla cakes and layer them with blackberry preserves. They then frost the cake with buttercream that gets its pinky-purple hue from gel food coloring and “blackberry essence.”

Now for the fun part! Using a pastry bag with a petal pipping tip, the Juniper gals start from the bottom and, wiggling the tip left and right as they guide it upwards, create ribbon-like rays of buttercream, all around the cake’s exterior. Their pro tip: “Your speed should be fairly slow, but your pressure should be a little hard.” Let us know if you successfully ruffle any feathers at home.
