Cake of the Day: Blood Orange Upside-Down Cake

Move over pineapple, there’s a new fruit that wants in on that upside-down cake action: the blood orange. Brooklyn-based ICE culinary student Mea Mazzarella documents her food experiments on Meats and Sweets. Her husband Cameron helps her develop the health-minded recipes, a mix of vegan and Paleo, and their chihuahua mix Chibi helps…well he does a really good job of looking cute.
For her blood orange upside-down cake, Mazzarella arranges the sliced citrus rounds at the bottom of a round, buttered baking dish. Then comes a simple batter flavored with Angostura bitters and poppy seeds. Once it’s baked through, Mazzarella loosens the cake by running a knife along the dish’s edges. She carefully inverts it and voilá! An upside-down cake with beautiful burnt orange discs adorning the top.
