Cake of the Day: Boozy Butterscotch Cinnamon Roll Cake

Talk about a showstopper! Cinnamon rolls meet yellow sponge cake in this insanely delicious-looking dessert from Sydney, Australia’s Belinda Lo, also known as The Moonblush Baker. You may remember her decadent speculoos cheesecake.
“The cake combination at the bottom is one of my faves,” she writes. Specifically, Lo loves how the butterscotch sauce, which is flavored with bourbon, is layered with whipped cream and topped with crunchy brown sugar meringues. All of this is sandwiched between egg yolk sponge cake, which is welled out to better hold the scrumptious filing. “I thought it was too pretty to be covered up by a layer of buttercream,” she writes. And we couldn’t agree more!
When Lo gets to the top she turns to Pioneer Woman’s cinnamon roll recipe for a jaw-dropping cake layer of swirly sticky buns. Lastly it gets a drizzle of bourbon sauce and garnish of pecans. Now quick — somebody hand me a cup of coffee!
