Cake of the Day: Chocolate Caramel Popcorn Cake by 'Top With Cinnamon'

Leave it to young and talented Izzy Hossack to show us what an 18th birthday cake should look like. The London-based teenager’s blog, Top With Cinnamon, led to a cookbook of the same name, published last September.
Did we mention that the cake above is for Hossack’s own 18th birthday?
She’s not your typical college student, developing photos and writing recipes in her free time. For this cake, she bakes five layers of chocolate batter into a rich, so-brown-it’s-almost-black tower, which she secures with peanut butter frosting. She then pours a bittersweet chocolate glaze over the top, and finally, garnishes with homemade caramel corn. ”It’s a superstar cake,” writes Hossack. “Especially because if you utterly mess up the glaze on top, you just get to cover it all up with popcorn and nobody eeeever knows….” That’s a superstar move.
