Cake of the Day: Easy Oreo Mint Ice Cream Cake by Bakerella
Photo: Bakerella
Bakerella's Angie Dudley is most popularly known as the queen of pop. Cake pops. You all know what those are by now, don't you?
Dudley started the massive trend of making mini lollipop-like, bite-size cake balls and still hold the throne. Her pops have been made for the likes of Martha Stewart, Blake Lively, and even Disney. No wonder her cookbook, Cake Pops, is a New York Times best-seller.
But Bakerella’s talents extent beyond cake pops. Case in point: this ice cream cake. She starts with a crust made of finely chopped mint Oreos and butter, into which she spreads mint chocolate-chip ice cream. She frosts the top with Cool Whip and finishes the cake with whole mint Oreos.
You’ve got competition, pops.
