Gluten-Free Black Currant Polenta Cake
Serves 1
Preparation time 3 minutes
Cooking time 2 minutes

2 tablespoons polenta
2 tablespoons (25 grams) slightly salted butter, very soft
2 tablespoons honey, plus extra to drizzle
2 tablespoons ground almonds
1 egg
2 tablespoons black currants
1 tablespoon black currant preserve
Beat together the polenta, butter, honey, and ground almonds in a 7 fluid ounce (200 ml) microwave-safe mug. Add the egg and beat together until well mixed.
Microwave on full power for 1 minute. Spoon the black currants and black currant preserve on top and stir in lightly so the polenta mixture is marbled with the fruit. Microwave on full power for 1 minute. Serve drizzled with extra honey.
