Cake of the Day: Honey Fig Cake With Pistachios
Peggy Saas of the blog Cake Crumbs & Beach Sand is behind today’s stunning cake topped with ruby-red figs, chopped pistachios, and a drizzle of gold honey. Saas is a food and lifestyle photographer living in Perth, Australia, which explains all the gorgeous pictures on her blog, a space where she likes to share and connect with other full-time working moms her experiences and recipes from her kitchen.

This dessert starts with a honey cake batter. To add flavor and balance the sweetness in the cake Saas throws in a half cup of espresso. Baked in an angel food cake pan, the cake comes out nice and fluffy. After it cools, Saas works on the toppings. She whisks up a mascarpone whipped cream and spoons it on top of the cake and scatters quartered figs. She sprinkles pistachios to add a little texture and for an extra taste of honey she dribbles the golden nectar all over the top.
