Cake of the Day: Magic Cookie Cake

This magnificent confection you see above is a cookie. Cake. A cookie cake. And as indulgent as it looks, it’s vegan, gluten-free, and made without processed sugar. (We think that’s the magic part.) “The flavor is incredible,” writes its author, Jessie Snyder, “you won’t miss the teeth-rotting stuff.”

And that extends to cookie cakes. In this recipe, Snyder creates a gluten-free dough with almond flour, coconut oil, almond butter, and maple syrup. She tops it with a mixture of dark chocolate, chopped macadamia nuts, and dried coconut shavings, puts it in the oven for half an hour and poof! A magic cookie in cake form.
