Cake of the Day: Malteser Layer Cake

Emma Gardner started her baking blog, Poires au Chocolat, at the age of 19. She grew up in Devon, England, but spent much of her childhood in the Swiss Alps, where she formed a love for pears and chocolate. That’s also where she decided to name her blog after said beloved items.
After earning a degree in English literature from Oxford University, Gardner spent five months studying baking and pastry at Le Cordon Bleu, and is now working on a medical degree at Cambridge. Poires au Chocolat may have been left alone since November 2014—studying to be a doctor is no small task—but that didn’t stop Saveur or The Guild of Food Writers from naming her one of the best bloggers that year. It also can’t stop us from drooling over her cakes.
With this beauty, Gardner won a Maltesers malted milk ball recipe competition. (Is there anything she can’t do?) She makes sponge cake layers using Horlicks, a popular malted milk drink in England, and whisks up a glossy ganache made of dark chocolate and cream that’s used to ice between and outside the cake. Halved Maltesers make for a graphic exterior.
