Cake of the Day: Pomegranate Citrus Meringue Cake

This all-natural pink dessert belongs to Hummingbird High’s Michelle Lopez, a finalist for Saveur magazine’s best baking and desserts blog award this year. (You can vote for her here through April 30.) We’ve featured Lopez’s work before in our Cake of the Day series; her tangerine sour cream cake was of January’s most popular.
As for today’s treat, Lopez writes: “I just wanted to bake something that was pretty, tasty, and time consuming enough to be therapeutic.” Enter this pomegranate citrus meringue cake.
Lopez starts with vanilla cakes and spreads both pomegranate-infused buttercream and homemade lemon curd between each layer. For some crunch, she adds crushed meringues (make your own or use store-bought ones if you’re short on time). She frosts the outside with more pink buttercream and sprinkles the top pomegranate seeds and more meringue crumbles.
A cake that’s crunchy, tart, and sweet! That’s the best kind of therapy.
