Cake of the Day: Rainbow Cake

Cookbook author Sandra Mangas Hernández shows us what’s at the end of a rainbow in this three-layered confetti cake. La Receta De La Felicidad (”The Recipe for Happiness”) is her popular blog filled with beautiful photography and creative recipes that she writes in both Spanish and English (she’s based in Spain). We’ve featured her cakes before on our Cake of the Day series and her natural red velvet beet cake was one of February’s most popular.
Today, she perfects the popular confetti cake with rainbow sprinkles perfectly buried in every slice. Using a particular type of sprinkle helps the cake retain its color and texture. The frosting is an egg white-based buttercream that’s not too sweet and is light as air. After each cake layer is filled and frosted she pipes on top two fluffy clouds. For the rainbow?
