Cake of the Day: Raw Coconut Mint Matcha Cake

Today’s cake is a simple no-bake green tea confection perfect for those hot summer days — and good for your waistline. The best part is it takes less than 10 ingredients to make this refreshing treat. The recipe is from Chris Anca, who writes the healthy food blog Tales of a Kitchen in Perth, Australia. By day she’s a development worker with the United Nations, and her blog focuses on recipes that are raw, vegan and seasonal.
This coconut mint matcha cake is “indulgent, delicious and healthy,” she writes. “Because it is so easy to put together it’s almost ridiculous to call it a recipe.”
Anca starts with a sticky dough she makes by mixing medjool dates and grounded flax and sunflower seeds. She then presses it into the base of a 4-inch cake pan and makes the filling. Adding coconut shreds, banana, lemon juice, and a handful of mint into a blender before giving it a blitz. Half of the filling is poured over the ‘dough’ and the other half is mixed with matcha green tea powder. She then pours the bright green matcha-infused filling on top of the first layer and pops it into the fridge for 30 minutes. Right before serving she dusts it with more matcha for an extra kick of vitamins and antioxidants. This summer treat will satisfy your sweet tooth without the guilt.
