Cake of the Day: Reese’s Brownie Ice Cream Cake

Today ends our weeklong of cakes made with America’s favorite dessert and, of course, we saved the best for last. This ice cream cake is dedicated to the most delicious duo known to man — chocolate and peanut butter. This mouth-watering creation belongs to Naomi Robinson, of the blog Bakers Royale, who we’ve feature as one of Bloggers of the Week. Robinson’s recipes are all beautiful and deliciously over the top like this Reese’s cake that she made despite her peanut allergy.

“This one is softened vanilla ice cream folded and turned with crushed Reese’s and toffee bits and then layered between three decks of my favorite Alice Medrich brownie recipe for a Reese’s Brownie Ice Cream Cake that is pretty unforgettable,” she writes. “Especially unforgettable if you are allergic to peanuts and have a reaction to it while making this.”

Robinson powers through this cake like a pro. She bakes a batch of her favorite brownie recipe in a jelly roll pan. She cuts out three 6-inch rounds from the brownie and uses them to stack and fill with vanilla ice cream that’s been mixed with Reesse’s peanut butter cups and toffee bites. On top she pours a luscious hot fudge sauce and sprinkles crushed Reese’s for a show-stopping cake perfect for the dog days of summer.
