Cake of the Day: S'mores Cake
Photo: Natalie Eng
Imagine toasted marshmallows, molten chocolate, and Graham crackers—the makings of a s’more—delivered to your mouth in perfectly even ratios each and every bite. That’s what today’s cake is.
The talent behind this creation is Natalie Eng, who at the early age of 19 began working at pastry shops in Paris. She later trained at the French culinary school Ferrandi and worked at both Antoinette in Singapore and Alain Ducasse’s Michelin-starred restaurant at Le Meurice hotel in Paris (also called Le Meurice). Talk about higher education! Eng now shuffles between the two cities writing recipes and photographing them for her eponymous website.
That’s where we found this cake, a campfire favorite turned haute, with buttercream frosting, four layers of chocolate cake, and fudge sauce. Eng tops the cake with a Swiss meringue that she pipes into pillowy peaks and then caramelizes with a torch. Head to her site and try the recipe.
