In celebration of our week of everything ice cream, today’s dessert is one anyone can enjoy. It’s a berry smoothie in the form of a dairy-free ice cream cake from raw and vegan cookbook author Emily von Euw of This Rawesome Vegan Life. You may remember von Euw from her Blueberry Vanilla Crème Cake featured previously on Cake of the Day. The blogger continues to write vegan-friendly recipes that show that you can live a delicious life without eating animal products.
“This cake is one delicious demon. It is creamy, sweet, fresh, tart, and colorful all at once,” she writes. “Plus it is super easy to make (surprise, surprise) and can be eaten the same day you make it.”
The cake comprises of two layers, one is a base of vanilla “ice cream” made of blended vanilla, cashews, dates, and bananas. The second layer is a blitzed purple mixture of frozen berries, vegan milk, and walnuts. Sliced strawberries lace the border and a heap of fresh blueberries decorate the top. It is a cake you’ll want to cool down with all summer long.
