Cake of the Day: Watermelon and Peach Fresh Fruit Cake

After a Memorial Day weekend full of BBQs and mouth watering desserts, we bring you a refreshing, naturally sweetened fruit cake packed with vitamins A and C. The last cake we featured by Not Without Salt’s Ashley Rodriguez, a lemon cake with raspberries, was hard to top but this one takes the cake! This gorgeous and creative dessert was made for her son Roman’s sixth birthday.
“When I asked Roman what he wanted for dessert he said, ‘Watermelon and peaches.’ His desire for fresh fruit and my desire for a tiered cake birthed this sort-of cake,” writes Rodriguez.
For the cake she cuts out tiers of circular watermelon slices and in between each she fans out a layer of ripe peaches. To fix them in place she pierces all the levels of fruit with a long wooden skewer. Fresh blueberries sprinkle the top for an extra punch of antioxidants.
“I wouldn’t be opposed to vanilla ice cream or some sort of sorbet served alongside the slices, but really, the kids didn’t need it,” she said.
