Cranberry Soda Recipe

Cranberry Cream Soda
Makes about 2 cups, enough for 12
If you didn’t use all of your cranberries for Thanksgiving relish, make this bright, refreshing soda. And if you want to turn it into dessert, add some whipped cream and orange zest on top.
1/2 cup cranberries, fresh or frozen
3/4 cup sugar
Soda water
Fresh whipped cream
Orange zest (optional)
Place cranberries, sugar, and 1 1/2 cups water in a small saucepan over medium heat and bring to a boil. Reduce heat to low and simmer until cranberries are falling apart, about 15 minutes.
Strain through a fine-mesh strainer into a medium bowl and let it cool to room temperature, about 1 hour. Discard solids. Syrup keeps in an airtight container in the refrigerator for up to 2 weeks.
To make sodas, fill a tall glass halfway with ice. Add 2 Tbso, syrup and then fill the rest with soda water. Taste and add more syrup if desired. Top each soda with a dollop of whipped cream and some fresh orange zest if you’d like.
