Creamy Coconut Porridge
Serves 1
I might go as far as to say that this is the world’s best porridge. It’s just so insanely rich and creamy, yet so nourishing! It’s such a speedy breakfast too and will keep you energized for hours thanks to all the goodness it has. It’s been such a huge hit on the blog and I’ve seen hundreds and hundreds of photos of Deliciously Ella fans re-creating and loving it on Instagram, so this one was too good not to share in the book too. I love my bowl topped with raisins and almonds, plus some fresh blueberries and raw honey.
½ cup oats
¼ cup coconut milk
1 banana, sliced
1 tablespoon almond butter
1 tablespoon coconut oil
Big handful of almonds
Big handful of raisins
Place the oats in a saucepan with ¾ cup water, the coconut milk and half the sliced banana.
Allow the mixture to simmer for about 10 minutes until all the liquid has been absorbed. At this point, stir in the almond butter and coconut oil and allow it to cook for another minute or 2 so that they totally melt into the porridge.
Meanwhile, place the almonds in a food processor and pulse for about 30 seconds until they are partially crushed. Place them in a dry frying pan for a couple of minutes to get crunchy.
Pour the cooked oats into a bowl and add the remaining slices of banana, the raisins and toasted almonds.
Top tip: If you’re in a hurry in the morning, you can leave your oats to soak in the water overnight and then just cook them with the coconut milk in the morning for 2 minutes or so until it’s hot, as the oats will already be soft so they won’t need the normal cooking time.
