Gluten-Free Gingerbread Cake with Cinnamon Buttercream

Today’s cake comes from Philadelphia-based food and baking blog A Cookie Named Desire, created by the talented Amanda Powell. It all started when Powell, who now works in marketing by day, moved to London for college; a combination of culture shock and newfound independence forced her to fend for herself in the kitchen. And it was a happy learning experience.
For this gluten-free delight, Powell uses freshly grated ginger, cinnamon, and Bob’s Red Mill’s 1-to-1 Baking Flour to make the gingerbread cake batter. After two 9-inch rounds have been baked, she fills and ices the top with cinnamon buttercream. Gluten-free gingerbread men and houses are baked using the same flour and live happily on top of the cake.
"Honestly [you] cannot tell that the flour was totally gluten-free. And the cookies? Pure chewy, gingerbread bliss,” writes Powell. Check out her recipe for some gingerbread bliss of your own.
