Salad with Beets, Quinoa, Goat Cheese, and Hazelnuts
4 cups baby kale
1 cup quinoa
4 roasted beets, quartered
2 tangerines, segmented
½ cup goat cheese, crumbled
¼ cup hazelnuts, toasted and chopped
Place kale on a large platter. Add beets, quinoa, oranges, goat cheese, and nuts. Drizzle the platter with dressing, and gently toss. Serve.
