Maple-Roasted Carrots With Goat Cheese
Serves 6
Sweet and savory and so simple! I really do love this recipe.
3 lb. baby carrots, halved
1/4 cup maple syrup
3 Tbsp. olive oil
1 tsp. kosher salt
1/4 cup crumbled goat cheese
3 Tbsp. chopped chives
Preheat oven to 400F. On a large baking sheet, toss carrots with maple syrup, olive oil and salt. Roast 15 minutes or until tender.
Remove from the oven and transfer to a serving platter. Garnish with goat cheese and chives to serve.
