News Flash: Truffles Do Not Belong on Donuts

It’s a sad day when a glorious ingredient like white truffle gets shaved carelessly over a greasy donut. We don’t care how delicate a donut it might be. IT’S BEEN FRIED IN A VAT OF OIL.
It’s cool. We’re calm.
Do-Rite Donuts in Chicago decided to shave white truffles on a donut (along with truffle syrup, fleur del sel, and Valrhona chocolate shavings), which sent us into an apoplectic rage. This baby costs $20 a pop. That’s $20 wasted, people.
There are so many better ways to use white truffles. Ways to make them shine! Ways to appreciate them like the rich slices of umami they are.
Below, proof: five ways to give white truffles the respect they deserve.
1. Shave them over a creamy pasta dish

Any pasta and a cream-based sauce will do. We dig this rich fettuccine with prosciutto and peas.
2. Fold them into mashed potatoes

Take those splendid shavings and fold them into a buttermilk mash like this one. The creamier it is, the better.
3. Sprinkle them over a salad.

We know salads can be boring. (Sometimes we’d rather just tuck into a giant steak.) But it’d be hard to turn down this satisfying asparagus salad with Parmesan, mint and hazelnuts…if it were topped with white truffles.
4. Shave them over risotto

White truffles have a texture that’s nearly creamy. This spinach and pea risotto is creamy. Yet neither is made with cream! Together, they’ll trick your brain into thinking otherwise.
5. Shave on to an omelet.

Take your basic omelet. Add a bit of mascarpone cheese, mint, and peas. Now take some white truffle shavings, and scatter them on top. Breakfast just got glamorous.
There, you see? We’re practically drooling now, and there’s nary a donut in sight.
