Oven-Baked Spicy Korean Chicken Wings
Serves 6-8

Game day isn’t complete without a platter of chicken wings. These oven-baked Korean chicken wings will satisfy your need for tangy flavor and crunchy texture, but doesn’t rely on a fryer to get you there.

4 pounds chicken wings
2 teaspoons baking powder
Salt
? cup ketchup
? cup gouchjang (Korean chili-garlic sauce) or Sriracha
? cup low sodium soy sauce
2 tablespoons rice vinegar
2 teaspoons sesame oil
? cup honey
2 tablespoons lime juice
2 tablespoons canola oil
6 cloves garlic, peeled and minced
2 tablespoons minced ginger
Sesame seeds, for sprinkling

Preheat the oven to 250°F. Using paper towels, thoroughly dry the chicken wings. Place the wings, baking powder, and a large pinch of salt into a plastic bag, and shake the bag to evenly coat the wings. Line a baking tray with aluminum foil, and place a roasting rack inside. Arrange the wings, on the rack, giving them space, and bake them on the lower oven rack, for 30 minutes. Increase the oven temperature to 425 °F, and move the chicken wings to the higher oven rack. Bake for another 20 minutes and set aside.

Mix the ketchup, gochujang, soy sauce, rice vinegar, sesame oil, honey, and lime juice in a bowl. Heat the oil in a saucepan placed over medium low heat, and add the garlic and ginger. Slowly cook until fragrant, about 2 minutes. Add the sauce, and cook it over low heat, for 2-3 minutes, or until it thickens slightly. Remove from the heat.

Brush a thick coat of sauce onto the wings, and sprinkle with sesame seeds. Bake the wings on the higher oven rack, for another 10-20 minutes, or until the wings are crispy and the sauce is caramelized. Serve with plenty of napkins and enjoy.
