Ramen Lasagna? It Can Be Yours With This David Chang Recipe
Ramen master David Chang rethinks lasagna with ramen noodles in a dish known as “ramensagna.”
In a video for Lucky Peach, the founder of the Momofuku restaurant empire combines crushed spicy ramen noodles, flour, and eggs to create homemade lasagna noodles.
“It’s going to be very brittle,” he admits. “You can’t really work the gluten in the dough, as it’s already pasta.”
Chang rolls out the makeshift dough, and stacks it with layers of savory mushroom ragu and scoops of bechamel sauce. He finishes the dish by charring the bechamel until gooey and digs in.

“Just like my nonna used to make,” Chang declares.
