Raspberry & Banana Instant Ice Cream from ‘Deliciously Dairy Free’

Raspberry & Banana Instant Ice Cream
Serves 4
2 ripe bananas
1¾ cups fresh raspberries, frozen
3 tablespoons dairy-free light cream
3 tablespoons confectioners’ sugar
Peel and roughly chop the bananas, then place in the freezer for 1 hour or until semi-frozen.
Add the frozen banana with the raspberries to a food processor and blend until just smooth.
Add the cream and sugar and pulse until combined.
Serve straight away, or scrape into a freezerproof container and freeze until needed.
