Peanut Butter and Kale: Sounds Weird, Actually Brilliant

Breakfast or brunch doesn’t have to be an overload of butter and sugar and egg (though sometimes, of course, that’s precisely what we want). But for when it’s not what we want, it’s good to know that mornings can, in fact, make you feel strong. The mix of savory kale with the classic sweet combo of peanut butter and bananas (but with no added sugar, not even in the PB!) makes this a smoothie with depth.

This can be a quick transformation of stuff you’ve got in your fridge, or, for the super hardcore who want to make their own nut milk, it’s the ultimate expression of DIY strength. This is a morning boost that’ll make you want to run six miles or lift something heavy or do some suicides and loop back for more. But even if you get no further than pushing a button on the blender, you can already feel good about a Saturday well spent.

GREEN PEANUT BUTTER SMOOTHIE

Ingredients:
1 banana
1 cup nut milk
1 cup torn kale
2 tablespoons peanut butter
1/4 teaspoon ground cinnamon
Preparation:
Blend 1 banana, 1 cup nut milk, 1 cup torn kale, 2 Tbsp. peanut butter, 1/4 tsp. ground cinnamon, and 1/2 cup ice in a blender until smooth.
