Homemade Vinaigrette
¼ cup extra virgin olive oil
1 small shallot, chopped
1 teaspoon Dijon mustard
1 teaspoon honey
Juice of 1 lemon
½ teaspoon kosher salt
½ teaspoon freshly ground pepper
Mix all ingredients in a mason jar, tighten lid. Shake well.
