Stuffing is a Thanksgiving staple, but gluten-free guests will shun the carby side dish like the plague.

But a combination of gluten-free bread, herbs, apples, and fennel come together to make this delicious gluten-free stuffing shown in this “Tipline” video.

Take cubed gluten-free bread that’s been left out to dry overnight, and add fresh herbs. Sautéed celery, garlic, onion, fennel, and green apples give it that Thanksgiving Day flavor we all know and love. Combine with gluten-free chicken broth to keep help it stick together, and stuff into muffin tin to bake.

Once done, you’ll have delicious single-serving gluten-free stuffing muffins for your Thanksgiving feast.

Gluten-Free Stuffing

8 cups cubed gluten free bread (1-inch cubes)
4 tablespoons unsalted butter
3 stalks celery, diced
1 large onion, diced
½ head fennel, diced
1 teaspoon kosher salt
2 green apples, peeled and cut into cubes
½ teaspoon nutmeg
¼ cup fresh parsley, chopped
2 tablespoons fresh sage, chopped
1 egg
3 cups chicken stock

Spread the bread cubes in a single layer on a baking sheet and leave out overnight to dry out.

Position an oven rack in the middle of the oven and preheat to 400° F. Butter two 12-count muffin tins and set aside. Transfer the bread cubes to a large bowl.

In a large saute pan, set over medium-high heat, melt 2 tablespoons butter. Add the celery, onions, and fennel, sprinkle with the salt and cook until the vegetables are translucent, about 5 minutes. Add the mixture to the bowl of bread and mix.

In the same saute pan, add the remaining 2 tablespoons butter and let brown for 30 seconds. Add the nutmeg and apples and saute until the apples are tender, 3 to 4 minutes. Add this to the bread bowl and mix. Add the parsley, sage, egg, and mix well. Drizzle chicken stock over mixture. Mix well.

Fill muffin tins with bread mixture. Pack stuffing down into tin. This will allow the stuffing to bind together. Bake uncovered for 15-20 minutes. Stuffing bread should be golden brown and edges should be crispy.
