The Secret: Ice Cream Sandwiches
One box of ice cream sandwiches, two pints of ice cream, a sleeve of Oreo cookies, and DIY Magic Shell are all it takes to make this ice cream dream a reality.
I discovered the idea for this cake on the blog Living Well Spending Less, via Pinterest. It sounded and looked too good to be true (spoiler alert: it’s not!), so I had to try it for myself.

How to Make the Ice Cream Cake
It really couldn’t be simpler: You line a pan with a sheet of aluminum foil and a layer of ice cream sandwiches along the bottom, then spread a layer of softened ice cream on top. Add another layer of ice cream sandwiches, and another layer of ice cream, then top with crumbled Oreos and chocolate sauce to make the last two layers.
The ice cream sandwiches each create their own set of layers with their cakey cookies and ice cream, and then all you’re doing is adding extra ice cream and cookie layers.
What Flavor to Choose?
The most difficult part of making this cake is choosing an ice cream flavor! You can layer any flavor of ice cream in between the standard chocolate-and-vanilla ice cream sandwiches to customize this.
You can follow my lead with homemade chocolate ice cream to make this cake a chocolate-lover’s dream come true. Or:
Try salted caramel ice cream if you love a good sweet-salty combo.
A fruit flavor, like strawberry or black raspberry, would definitely hit the spot.
Or go crazy with different flavors of ice cream on each layer. What about cheesecake in one layer and cherry in another for a chocolate cherry cheesecake?
Oh, and if you love the chocolate crunchy and fudge-filled centered of traditional ice cream cakes, you’ll go crazy for the Oreo cookie-magic shell topping used here!
