What Is Rum Made From?
Rum is an alcoholic fermented drink that’s distilled from derivatives of the sugar cane plant, says Lorena Vasquez, master blender for Zacapa Rum, which is handcrafted in Guatemala.
“To make rum, you first must create a fermentation of sugar, yeast and water, much the same way you make beer or wine,” explains Kelly Moffitt, master distiller and owner of Clever Fox Rum. “That fermentation is called a ‘wash,’ and once it reaches the desired alcohol percentage, it is placed into a still and heated to separate the alcohol molecules from the solids and most of the water.”
In order to be called “rum,” the spirit must be bottled at a proof of 80 (40 percent alcohol by volume) or higher. “Additives such as flavorings, spices or sugar may be added after distillation,” adds Moffitt.
Where Do the Best Rums Come From?
Rum is produced in sugar cane-producing countries. These countries include Jamaica, Cuba, Barbados, Guatemala and the United States (including Puerto Rico).

What Are the Different Types of Rum?
When it comes to the different types of rum, this is actually a bit of a heated debate in the industry, notes Moffitt. That’s because there are no common regulations controlling worldwide rum production, and there also aren’t standard categories of rum, she says. It varies as widely as varieties of wine, adds Moffitt. “You can categorize by region, ingredients, style, flavor, distillation methods—the list goes on,” she says.
At Clever Fox, Moffitt says her team categorizes rum into three main categories: unaged, aged and flavored, which includes spiced. “You can think of these like you think of wine as having white, red or sparkling categories,” she says.
Then, within these three main categories, there are a few main flavor profiles you can further narrow rum down into, if you desire, according to Moffitt. These include:
Jamaican style: This type of rum has funky, fun flavors due to wild yeasts and is often overproof.
Agricole style: This type of rum is grassy and bright. “These are made from fresh sugar cane juice and will be called ‘Cacha?a’ in Brazil,” says Moffitt. “If you’ve ever had a caipirinha, you’ve had Agricole-style rum.”
Molasses-based: This type of rum is deeper, with more malty flavors due to the cooked sugar and caramel notes of molasses.

What Cocktails Can You Make With Rum?
There are a lot of different cocktails you can make with rum. Per Javelle Taft, head bartender at Death & Co in New York City, some of the most popular rum cocktails include:
Pi?a Colada: a frozen cocktail made with white rum, dark rum, pineapple, pineapple juice, coconut cream and ice.
Rum and Coke: a cocktail made with light or dark rum and your cola of choice.
Jungle Bird: a cocktail made with dark rum, Campari, pineapple juice, lime juice and simple syrup.
Queens Park Swizzle: a cocktail similar to a mojito made with demerara rum, mint leaves, simple syrup, lime juice and angostura bitters.
Dr. Funk: a cocktail made with dark rum, absinthe, lemon juice, lime juice, simple syrup, grenadine, soda water and mint leaves for garnish.
Mai Tai: a cocktail made with white rum, dark rum, orange cura?ao, lime juice and orgeat.
El Presidente: a cocktail made with white rum, dry vermouth, orange cura?ao and grenadine.
What Is the Best Rum for Pi?a Coladas?
“Pi?a Colada is unexpectedly a member of the ‘flip’ family of cocktails, which historically is a cocktail of spirit, sugar and a whole egg, served cold,” explains Moffitt. “In the colada, the coconut replaces the egg, and its richness is cut by the pineapple.”
Moffitt says a molasses-based rum is a good pairing here since the richness brings out the caramel notes in the pineapple. You can also include a little blackstrap rum (rum with blackstrap molasses added) if you want more richness or Agricole rum if you want a bit of a brighter taste.
What Is the Best Rum for Mojitos?
“A mojito is in the ‘sour’ family of cocktails and is a bright and universally loved cocktail,” says Moffitt. “To pair with the tang and brightness of the mint and lime, you will usually want to stick with a light, unaged rum, without too much richness.” Vasquez, meanwhile, prefers an aged rum for a unique twist on the classic mojito.
Which Rum Is the Smoothest?
When it comes to choosing a smooth rum for sipping, experts agree an aged rum is ideal. “Like most spirits, rum that has been aged in wood is often going to have the smoothest mouthfeel and the least amount of ‘heat’—which makes it ideal for sipping,” says Moffitt.
However, she says you shouldn’t feel like you have to choose the oldest rum on the shelf. “Due to its molecular composition, rum matures faster than whiskey, so you can have a three-year aged rum that will rival your favorite 10-year aged bourbon,” says Moffitt.
