30 Effortless Dinners to Make Every Night in June
We know, summer doesn’t officially start until the end of the month. But post-Memorial Day, we’re ready for long days at the pool, cocktails on the deck and not thinking about what’s for dinner. Thankfully, there’s plenty of beautiful produce in season (hello, heirloom tomatoes). Put on your favorite white jeans—here are 30 effortless dinners to make every night in June.
RELATED: 30 Summer Dinners You Can Make in 30 Minutes or Less
June 1: Chicken Kebabs with Garlic Lemon Yogurt
It’s Saturday night, so why not fire up the grill and invite some friends? These kebabs taste like they’ve been marinating all day, but thanks to a flavor-packed Middle Eastern spice blend called baharat, they actually come together in minutes.
June 2: The Ultimate Quinoa Avocado Bowl
We’re all about meal prep on Sundays, and this dinner can easily stretch into lunches all week long. Just make an extra batch of everything to assemble in the mornings. (Future you will be so thankful.)
June 3: One-Pot, 15-Minute Pasta Limone
The best part about this lightning-quick pasta is that you probably already have all the ingredients on hand. Make it on a Monday when you’ve spent the whole weekend outside (instead of at the grocery store).
June 4: BLT Tacos
Juicy summer tomatoes are just hitting farmers markets, so you can bet we’re using them everywhere we can. (Even on Taco Tuesday.)
June 5: Chopped Greek Salad
Coterie member Maria Lichty knows exactly what we want to eat on a warm night. Loaded with feta, olives, chickpeas and plenty of fresh veggies, it’s hearty enough for a full meal, without feeling too heavy.
June 6: Honey Mustard Chicken Bake
This savory-sweet sheet-pan dinner is almost totally hands-off, which leaves you plenty of time to do everything you’ve been putting off all week (we’re looking at you, five loads of laundry).
June 7: 10-Minute Pad See Ew
It’s Friday night and the siren song of delivery has never been stronger. But why succumb when this bowl of noodles is faster, healthier and definitely tastier?
June 8: Grilled Flank Steak with Lemon-Herb Sauce
We highly recommend throwing the steak into the marinade and then retiring to the patio for a glass of cold rosé. (Repeat every Saturday night until Labor Day.)
June 9: Garlic Butter Capellini Pomodoro With Shrimp
We love family dinners on Sunday nights, especially with a big bowl of pasta. This one—with a light butter garlic sauce and roasted cherry tomatoes—is perfect for the warmer weather.
June 10: Spring Roll Bowls
Everything we crave about spring rolls, without the greasy, fried wrapper. (And did we mention that there’s a peanut sauce?)
June 11: Cauliflower Plantain Tacos with Lemony Pesto Dressing
We love how flexible this recipe is—feel free to swap out the plantains for yams or sweet potatoes, and the cauliflower for broccoli. Just don’t skimp on the addictive pesto dressing.
JUNE 12: KELP AND ZUCCHINI NOODLE PAD THAI
This low-carb twist on the Asian noodle dish is just as delicious cold as it is warm, so make extras and pack them up for lunches the rest of the week.
June 13: Gwyneth Paltrow’s Easy Frittata
This recipe basically demands that we use up all of the random veggie scraps leftover in our fridge. Don’t mind if we do. (And our general rule of thumb is: If it’s good enough for Gwyneth, it’s good enough for us.)
June 14: Kale Pesto Pizza
Friday night will always be pizza night in our book. But instead of ordering, we’ve love this homemade version with a healthy whole-wheat crust and plenty of kale pesto.
June 15: Greek Turkey Burgers with Tzatziki Sauce
It’s officially burger season, and we’re obsessed with this lighter version, with plenty of tangy tzatziki sauce on top.
June 16: Sweet And Sour Pork Skewers With Pineapple
Just like the sweet-and-sour pork you used to order from your favorite Chinese restaurant, only grilled instead of fried. We serve these over steamed rice (or cauliflower rice, if we’re staying low-carb).
June 17: 20-Minute Burrata Salad with Stone Fruit and Asparagus
We’ve been waiting all winter for stone fruit season and now it’s time to soak it up. The sweet fruit pairs perfectly with creamy burrata (think: your favorite Caprese salad but better).
June 18: Ricotta Gnocchi With Lemony Sage Butter Sauce
Homemade gnocchi sounds like a Sunday project, but this recipe is done in just 30 minutes. Because sometimes you need a Tuesday dinner that doesn’t feel like one.
June 19: Joanna Gaines’s Asparagus and Fontina Quiche
Cheesy, filled with fresh spring veggies and made with a store-bought piecrust. Joanna Gaines just gets us.
June 20: Weeknight Chicken Enchiladas
You’re almost finished with your tough week, which means it’s time for some guacamole and a margarita. (Thanks for the inspiration, Coterie member Jess Larson.)
June 21: Grilled Flatbread Pizzas with Artichokes, Ricotta and Lemon
Grilling season doesn’t have to mean a steady diet of burgers and hot dogs. We love using it for flatbread pizza—the dough crisps up in minutes, and the topping possibilities are endless.
June 22: Wild Alaska Salmon and Smashed Cucumber Grain Bowls
How to beat the Sunday scaries and start the week right? A super-healthy dinner full of omega-3s certainly can’t hurt…
June 23: 30-Minute Basil Chicken Banh Mi Sandwich
With sticky-sweet chicken, crisp pickled veggies and a fried egg, this sandwich is pretty damn epic. And you won’t believe how easy it actually is to make.
June 24: Grilled Lemon-Herb Chicken and Avocado Salad
Sometimes we try to eat a salad for dinner and end up feeling hungry an hour later. But not with this salad—the combination of healthy grains, grilled chicken and avocado keeps us full for hours.
June 25: Orecchiette with Spring Greens
We always think of winter as pasta season. But this one is light and simple enough for any early summer night.
June 26: Thai Beef Bowls with Rice Noodles
Fresh herbs make all the difference in this quick noodle bowl. We’re willing to bet these will earn a permanent place in your summer rotation.
June 27: Green Shakshuka
You’ve probably had tomato-based shakshuka before, but what about switching things up with herbs and spinach? We love the spicy kick from the jalapeño.
June 28: Chipotle Chicken Lettuce Wraps
A tip from Coterie member Gaby Dalkin: Throw the chicken in the marinade before you go to work and come home to an almost-ready easy dinner. Swapping tortillas out for lettuce wraps also keeps this healthy and low-carb.
June 29: Sheet-Pan Lemon Butter Veggies and Sausage
Store-bought sausage is truly an unsung hero. Roast it together with veggies on one pan, drizzle it with a little lemon butter and dinner is done.
JUNE 30: SUMMER Minestrone with Turkey Meatballs
As much as we hate to admit it, there are cool and rainy summer days. And when those come around, this is exactly what we want to eat. It’s full of summer veggies and herbs, which keeps things light, but it also keeps us warm and cozy until the sun comes back around.
