Amish Breakfast Casserole Recipe
Ingredients
6 large eggs, beaten
1 medium white onion, diced
4 cup frozen diced potatoes, thawed
2 cup shredded cheddar cheese
1? cup monterey jack cheese
1? cup large curd cottage cheese
1 lb pork sausage
2 tsp dried parsley
salt and pepper
Preheat oven to 350℉.
Grease a 9x13 baking dish.
In a skillet on medium high heat, brown sausage and onion until no longer pink, breaking meat up into small pieces.
Drain well.
In a large bowl whisk eggs.
Add potatoes, 3 cheeses, sausage mixture, salt and pepper.
Mix well.
Transfer to baking dish.
Sprinkle with parsley.
Bake for 40-50 minutes until toothpick in center comes out clean.
Let sit 10 minutes before cutting.
