St. Patrick's Day is one of my favorite food holidays. Every year I try and come up with a few dessert recipes for the whole family to enjoy and these Baileys Cheesecake Bars are at the top of the list. I mean, who doesn't want to enjoy at adult dessert recipe spiked with Bailey's Irish Cream, on the most Irish day of the year?! My husband and I love them and I know you will too.

The Baileys adds a nice depth of flavor to the rich, chocolaty ganache that tops these already decadent cheesecake brownies. You only need a small amount for this St. Paddy's speciality as well.

Bailey's Cheesecake Bars Recipe

Ingredients

  • 2 cups graham cracker crumbs

  • ? cup unsalted butter, melted and cooled to room temperature

  • 2 tbsp green food coloring.

  • 3 - 8 oz. packages cream cheese, softened

  • ? cup granulated sugar

  • 3 large eggs

  • ? tsp vanilla extract

  • 1 cup mint chocolate chips, found next to the regular chocolate chips at most grocery stores, Target, and Walmart

  1. Preheat oven to 350 degrees.

  2. Line a 9x13 baking pan with parchment paper. Set aside.

  3. In a medium mixing bowl, combine graham cracker crumbs, butter and green food coloring. Stir well to combine. Press into the bottom of prepared baking pan. Set aside.

  4. Using a standing mixer, beat together softened cream cheese and sugar. Add eggs, one a time and mix well.

  5. Add in vanilla extract with a rubber spatula.

  6. Fold in ? cup of the mint chocolate chips.

  7. Pour cream cheese mixture on top of crust. Smooth out with the rubber spatula to even out.

  8. Sprinkle remaining ? cup mint chocolate chips over the cheesecake mixture

  9. Bake in oven for approximately 38 to 42 minutes or until center is set. Check at 38 minutes.

  10. Cool for 15 minutes on a wire rack then transfer to the refrigerator to cool completely. This could be about 3 hours.

Bailey's Ganache Frosting

  1. Using a small pot, heat heavy whipping cream until simmering.

  2. Place the chocolate chips and Bailey's into a heat proof bowl and pour the hot heavy whipping cream over the chocolate chips.

  3. Allow to sit for 1 minute before mixing until smooth.

  4. Pour the chocolate ganache over the cooled cheesecake bars. Smooth out. The ganache should set up fast since the bars are cold. Once set, cut into bars.

  5. Enjoy!
