An insider's guide to the top luxury hotels in and around Carcassonne, including the best places to stay for rampart views, Michelin-starred restaurants, historic buildings, characterful interiors, outdoor pools and terraces.

This century-old hotel set within the walls of the medieval city boasts a Michelin-starred restaurant. Traditional rooms are full of character, and there's a pretty garden with heated pool and views over the ramparts. Built in sections over the years, today the hotel features a grand wooden staircase, arched, leaded windows, plenty of ornate cornicing, stained glass and floor length curtains and a lounge with a grand piano. The oldest part of the hotel includes a 12th-century tower with a stone staircase. There’s an intimate Cinq Mondes spa with hammam, two treatment rooms and a relaxation room. There’s also a gated, heated outdoor pool (open May to September).

A restaurant with rooms at the very top of its game. The two-Michelin-starred restaurant offers original, high-concept dishes and flawless service, while the Japanese-inspired rooms are slick and ultra-modern with furnished terraces or balconies. The design throughout the very modern hotel and restaurant is carefully thought through so that it is tastefully similar yet different – there are driftwood sculptures, plenty of wood and slate and huge plate-glass windows.

With a third-floor indoor pool and a fourth-floor restaurant, both with spectacular views of Carcassonne's medieval citadel, this modern four-star hotel offers a practical and comfortable base from which to explore all areas of the city. It's mid-sized and modern with glitzy touches such as gold button-back chairs in the lobby and a feature chandelier. Colours vary from room to room but are typically muted with splashes of bright colour provided by cushions or feature wallpaper. There’s a small viewing terrace on the roof.

This family-run country house hotel – set in a 19th-century building in almost 100 acres of grounds – oozes grandeur without a hint of stuffiness. Staying here feels almost like visiting a benevolent rich relative’s home – except with a golf course and Michelin-starred restaurant on site too. Inside there are ornate fireplaces, huge mirrors, tapestries on the walls, antique rugs, statues and items collected by the family on their travels over the years. The grounds include mature trees, stone walls and plenty of little nooks to sit in.

This slick hotel at the gates of the medieval city has an outdoor pool and garden with incredible views, and is both quiet and restful as well as centrally located. It's housed in an entirely modernised 18th-century building; the tone is strictly contemporary with clean lines, black or coloured walls (different on each floor), a polished resin ground floor and black and white swirled carpets in the upstairs corridors. Outside there’s a terraced garden leading up to a field with views over the medieval city and the vineyards beyond.
