‘Every day is Farmers Market’: New SLO shop sells fresh, local produce, meats and fish

The San Luis Obispo Public Market is getting a brand new market selling fresh, locally sourced and sustainable foods.

Bishop’s Market — or B Market, as its owners call it — is set to open Friday at 3885 S. Higuera St.

It’s a new concept led by executive chef Omar Rojas. The market will partner with local purveyors to give shoppers access to convenient and fresh produce, meats and fish, Rojas said.

“We are excited to support the local community by introducing talented, passionate local producers and artisans who make the offerings at B Market truly special,” Rojas said in a news release. “Our focus is on ensuring our customers have convenient access to fresh, high-quality and unique offerings in a pleasant atmosphere.

Rojas has been in the food industry since he was a teenager in Southern Californian, he told The Tribune. He first worked as a dishwasher, then went to trade school to learn kitchen basics before moving into working as a chef.

Throughout his career in the food and restaurant industry, Rojas said he developed a love of local produce and ingredients.

“This is what I want to do my whole life,” Rojas said. “You get instant gratification seeing people happy. It’s also one of those jobs that even if you have a bad day one day, you can have a redemption and a better day the next. “

In addition to the produce, meats and fish offered in-store, Bishop’s Market will also sell “B Boxes,” which will be filled with fresh produce and a recipe with step-by-step instructions to help prepare tasty meals.

Whether you are gluten-free, vegan or pescatarian, Rojas said there is a B Box that will fit your need. Customers can even call Bishop’s Market and make specific requests for curated boxes.

“If you want to get creative, you can call and ask the B Box to include halibut for two,” Rojas said. “We will talk to the person and figure out what types of vegetables and sides they might like that will pair with their dish.”

Customers can even choose a bottle of wine to pair with their B Box, Rojas said.

In the future, Rojas said Bishop’s Market will host “Meet the Maker” pop-ups to allow the community to connect with local farmers and purveyors. Rojas will also lead cooking demonstrations and seasonal dinners in the future, he said.

“We want to show people what we can do with local products without the need to export products,” Rojas said. “We are trying to be a little more green and self-sustainable. We are thinking about the world and how to change the future of markets.”

B Market planned to celebrate its grand opening Friday at 5 p.m.
