Celebrate Fall With This Apple Cider Donuts Recipe That’s A Breeze To Whip Up
Now that fall weather is almost upon us, my local grocery store is stocked with apple cider. I'm always tempted to buy a gallon jug, but the problem is I usually only drink a glass or two. So, I'm always looking for clever ways to use up the extra. That's why I love this Apple Cider Donuts recipe. We transform the juice into a syrup and use it to create the batter for these light-as-air treats.
Making the syrup couldn't get any easier. Simply simmer the cider until the liquid is reduced by half. That's all there is to it! For an even bigger pop of flavor try adding whole spices like cinnamon sticks, cloves or allspice berries in with the cider before simmering. Once the syrup is cooled, strain and discard the spices. Ingredients
2? cups refrigerated apple cider
3? cups all-purpose flour
1? cups sugar
2 tsp. baking powder
1 tsp. ground cinnamon
? cup butter, melted
1 egg
Oil, for frying
Instructions
In pot, bring cider to boil over medium-high heat; reduce heat to medium. Cook until cider is reduced by half, (1? cups), about 15 min. Transfer to bowl; chill until cool, about 1 hr.
In large bowl, combine flour, ? cup sugar, baking powder, cinnamon and ? tsp. salt. In separate bowl, whisk together cooled syrup, butter and egg; stir into flour mixture. Using hands, knead until dough forms. Transfer dough to lightly floured surface. Roll out to ?" thick. Using 2?" and 1" round cutters, cut out donuts and centers, reshaping scraps as needed.
In heavy bottom pot, heat 2" oil over medium heat until shimmering or until deep-frying thermometer inserted into oil registers 350°F. In batches, fry donuts, flipping once, until cooked through, 1-2 min. per side. Drain on paper towels. In medium bowl, toss warm donuts in remaining 1 cup sugar until coated. Transfer to rack; cool.
