Celebrity chef Cat Cora shares how to make a delicious stir-fry with leftover ingredients
Like many, celebrity chef and lifestyle expert Cat Cora has been staying at home — but that doesn’t mean she hasn’t been keeping busy.
The pro chef has been showing fans how to whip up delicious dishes daily on her Instagram Live stories, and recently, she shared an easy recipe for leftover stir-fry with Yahoo Life in the new series, Cooking for Comfort.
“This is my leftover stir-fry,” Cora tells Yahoo Life. “It is delicious. Put anything in it. It’s a great vehicle for anything you have that’s leftover or frozen.”
The star ingredients of Cora’s stir-fry are leftover beef and chicken, which she sautés with some frozen vegetables, garlic paste, fresh ginger, shiitake mushrooms and chives.
The key to cooking a stir-fry, Cora explains, is to make sure you cook everything over high heat. “The whole point of a stir-fry is it’s quick cooking,” she says. “You’re not pan-frying or deep-frying. You just have a little oil in the bottom of the pan, and you’re cooking on high heat very quickly.”
To finish the dish, she tops it with Bragg Liquid Aminos, which is a gluten-free soy sauce alternative.
“It’s so pretty,” Cora remarks as she plates the dish. “Look at that.”

Cat Cora’s Leftover Stir-Fry
1 pound leftover cooked chicken and beef, cut into small pieces (any protein will do or veggie only)
2 tablespoons olive oil
2 cups fresh or frozen mushrooms, sliced
2 cups frozen carrots
2 cups frozen vegetable medley
1 teaspoon freshly grated ginger
2 tablespoons of chives or scallions, chopped
1 tablespoon of Bragg’s Liquid Aminos or soy sauce
Salt, to taste
Pepper, to taste
Heat a large sauté pan on high heat. Add olive oil and mushrooms. Sauté until golden brown, about 2-3 minutes. Add frozen vegetables and chicken and beef, and cook for 3-4 minutes. Add the grated ginger and chopped chives. Toss to combine.
Transfer the ingredients to a plate, and top with a few squirts of Bragg’s Aminos. Season with salt and pepper.
