Cheap and Easy: These Game Day Mini Pizzas Will Please Everyone

Real talk: Game Day really isn’t Game Day without the yummy finger foods. When it comes to pleasing a crowd, things can get tricky, but one thing we can all agree on is pizza. While ordering multiple kinds of pies can get pricey really fast, these mini English muffin pizzas are an all-around win. From tangy Buffalo chicken to a meatless Margherita, these healthier budget-friendly mini pies will be a hit with everyone.

Game Day Mini Pizzas

(Makes 24 mini pizzas)

Basic Ingredients:

  • 12 English muffins, sliced in half

  • 16-ounce jar of pizza sauce

  • 16-ounce bag of shredded mozzarella cheese

Each pizza should be assembled with (approximately):

  • 2 Tablespoons pizza sauce

  • 2 Tablespoons shredded mozzarella cheese

  • 2 Tablespoons toppings of your choice

Eyeball the ingredients and take care not to overfill them.

 

Meaty Pizza Variations

Pepperoni:

(serves 6)

  • pepperoni sticks, sliced into thin rounds

  • optional toppings: hot banana pepper rings

Buffalo Chicken:

(serves 6)

  • about 2 cups of cooked shredded chicken

  • 1/3 to 1/2 cup Frank’s Red Hot

  • optional toppings: crumbled blue cheese or feta and chopped celery leaves

Pesto Chicken:

(serves 6)

  • about 2 cups of cooked shredded chicken

  • 3-4 Tablespoons of basil pesto

  • optional topping: crumbled feta

 

Veggie Pizza Variations

Veggie Lover’s:

(serves 6)

  • button mushrooms, sliced

  • green bell pepper, diced

  • red onion, thinly sliced or diced

  • cherry tomatoes, sliced

  • green olives, sliced

Margherita Inspired:

(serves 6)

  • cherry tomatoes, sliced

  • fresh basil leaves (if they’re large, you can slice them into ribbons or roughly chop them)

Greek Inspired:

(serves 6)

  • kalamata olives, sliced

  • red onion, thinly sliced or diced

  • cherry tomatoes, sliced

  • crumbled feta

Instructions:

  1. Pre-heat your oven to 375 degrees Fahrenheit.

  2. Prep all of your ingredients and have them handy by creating an assembly station to make things easy.

  3. Place sliced English muffins on a large cookie sheet. (Depending on how many you’re making, you may have to do this in two batches.) Slather 1-2 tablespoons of pizza sauce over each slice. Sprinkle a generous amount of shredded mozzarella over each slice. Now, deck your slices with your chosen variety of toppings.

  4. When done, place in the oven and bake for 10-12 minutes, or until cheese is melted and the English muffins are toasty. Set them out on a platter and dig in!
