4 Tbs. olive oil
1 (?-oz.) envelope active dry yeast
1 ? cup all-purpose flour
? cups chickpea flour
? tsp. salt
1 (4 oz.) log garlic-and-herbs goat cheese, at room temperature
1 Tbs. milk
2 cups cherry tomatoes, halved
? cup Asiago cheese shavings, 1 oz.
? cup basil leaves, thinly sliced
Directions:

Total time: 2 hrs
Yield: 4 servings
Grease large bowl. On low speed using dough hook, combine 3?4 cup warm water, 3 Tbs. oil and yeast; let sit until frothy, 4 to 5 minutes. Beat in flour and salt until smooth dough forms, 3 to 4 minutes. (Alternately, on lightly floured surface, knead dough by hand, 10 minutes.) Transfer dough to bowl; cover. Let rise in warm place until doubled in size, about 1 hour.
Place oven racks in center and lower third of oven; heat to 450°F. Coat 2 rimmed baking sheets with cooking spray. In bowl, stir together goat cheese and milk.
Punch dough down; on baking sheet, stretch out to 16 ?-by-8 ?-inch rectangle or oval. Brush with 2 tsp. oil. In bowl, toss tomatoes with remaining 1 tsp. oil; spread out on remaining baking sheet. Place tomatoes on center rack and dough on lower rack. Roast tomatoes until softened, 7 to 8 minutes. Bake dough until golden, 13 to 15 minutes. Spread dough with goat cheese mixture. Top with tomatoes. Bake until cheese mixture is melted, 5 minutes. Top with Asiago and basil.
2. Mixed Berry Pancake

Heat oven to 400°F. In medium bowl, combine chickpea flour, all-purpose flour, cinnamon, baking powder and salt. In separate bowl, combine egg yolks, ? cup yogurt, sugar, butter, vanilla and ? cup water; stir in flour mixture.
On medium-high speed, beat egg whites until stiff peaks forms. Fold into egg yolk mixture. Coat 10-inch oven-proof nonstick skillet with cooking spray. Transfer batter to skillet. Top with fruit.
Bake until no longer wet in center, 10 to 12 minutes. If desired, top with additional yogurt and strawberries. Drizzle with maple syrup.
