Who owns Salvador Deli?

Linda Moore, who co-owns the Kilted Mermaid in Vero Beach, and Courtney Cotherman, who worked there for 10 years, started Salvador Deli together in 2022 for catering events. "She wanted to have her own place eventually," Moore said of Cotherman, "but she didn't want to do it all by herself the first time." Moore's son mostly is running Kilted Mermaid now, so she's able to partner to start the new restaurant.

Although it wasn't in his original plan, brewery co-owner Mike Malone had been thinking about adding a permanent restaurant for about five years before the coronavirus pandemic put those plans on hold. He and his wife, Brooke, get asked about food more than anything. "We've always known that we needed food," Malone said. "We've relied on food trucks for a long time, but having to rely on food trucks doesn't give the consumer a dependable thing."

What kind of restaurant is Salvador Deli?

It will be inside the 24,000-square-foot brewery, in its only air-conditioned space, a 732-square-foot room. It will have a few tables, chairs and a counter where customers can drink their beers while they wait on and eat their food. There also will be a pickup window and text alerts for customers to take their food back to their seats in the brewery.

What kind of food does Salvador Deli?

It will be a quick-service restaurant that will serve "artfully elevated pub food." The menu will feature sandwiches, flatbreads and specials, and it will change seasonally. They hope to add fish tacos on Tuesday and a Sunday brunch menu after yoga.

When will Salvador Deli open?

They will sign their lease June 1, 2024, and hope to open by July 1, depending on construction.
