Here’s What to Cook Every Night This Week (December 9 - 15)
We don’t mean to alarm you, but there are only two weeks until Christmas. That means you’ll probably want to spend more time shopping, wrapping presents and baking cookies, and less time making dinner. We hear you. Here’s an easy dinner menu for every night of the week (and a handy shopping list, too).

Monday: Chicken Thighs with Pancetta and Green Olives
It’s a five-ingredient dinner, but it’s unbelievably fancy, thanks to pancetta and Castelvetrano olives.
Tuesday: Butternut Squash Carbonara
Did someone say pancetta? We’re breaking it out again for Tuesday’s recipe, which might just be our new favorite comfort food.
Wednesday: Cauliflower Fried Rice
We’re partial to any dinner that features our very favorite vegetable…and bonus points when we get to mix in a runny yolk into it.
Thursday: Portobello and Avocado Quesadillas with Magic Green Sauce
It’s tough to get kids and adults to agree on what’s for dinner. (Like, impossible.) But these tortillas topped with veggies, cheese and a magical green sauce is guaranteed to be an all-ages crowd-pleaser.
Friday: One-Pot, 15-Minute Pasta Limone
When you’ve had a long week, cooking is the last thing you feel like doing. Lucky for you, this hearty main basically makes itself (and there’s only one dish to do).
Saturday: Parmesan Ranch Chicken Thighs
We like to go really over the top and dip our ranch chicken in ranch dressing (don’t judge us).
Sunday: Cauliflower and Plantain Tacos with Lemony Pesto Dressing
Let’s face it—on Sundays, you’re eating in front of the TV. You might want to bring extra napkins for these babies (and some hot sauce, obviously).
